  • 250 g button mushrooms
  • 1½ tbsp olive oil
  • 1 tbsp butter
  • 1 tbsp finely chopped garlic
  • 1 tsp dried oregano
  • ½ tsp chilli flakes
  • ½ tsp black pepper powder
  • ½ tsp mixed herbs
  • 1 tbsp lemon juice
  • Salt to taste
  • 1 tbsp fresh coriander or parsley, chopped

1. Clean the mushrooms
Gently wipe or rinse the mushrooms and pat them completely dry. Trim the stems if needed.

2. Prepare the garlic marinade
In a bowl, combine olive oil, melted butter, chopped garlic, oregano, chilli flakes, black pepper, mixed herbs, lemon juice and salt.

3. Marinate
Add the mushrooms and toss gently until they are evenly coated. Let them rest for 10–15 minutes.

4. Grill the mushrooms
Heat a grill pan over medium-high heat. Place the mushrooms in a single layer and grill for 3–4 minutes on each side, until golden brown and lightly charred.

5. Add the finishing touch
Brush with a little extra garlic butter while grilling for a richer flavour.

6. Garnish & serve
Transfer to a serving plate and garnish with fresh coriander or parsley. Serve hot with lemon wedges.
