Crispy Corn is a delicious Indo-Chinese-style snack made with sweet corn coated in a light, crispy batter and fried until golden. Tossed with crunchy vegetables, herbs and spices, it makes a perfect party starter or evening snack.

🛒 Ingredients

For Crispy Corn

  • 2 cups sweet corn kernels
  • 3 tbsp cornflour
  • 2 tbsp all-purpose flour (maida)
  • ½ tsp black pepper powder
  • ½ tsp red chilli powder
  • Salt to taste
  • 1 tsp ginger-garlic paste
  • 2–3 tbsp water, as needed
  • Oil for deep frying

For Tossing

  • 1 tbsp oil
  • 1 tbsp finely chopped garlic
  • 1 green chilli, finely chopped
  • 2 tbsp finely chopped onion
  • 2 tbsp finely chopped capsicum
  • 1 tbsp spring onion
  • ½ tsp red chilli flakes
  • ½ tsp black pepper
  • ½ tsp chaat masala
  • 1 tsp lemon juice
  • Fresh coriander, chopped
  • Salt to taste

👩‍🍳 Method

1. Prepare the corn
Boil the sweet corn kernels for 3–4 minutes. Drain completely and pat them dry with a kitchen towel.

2. Make the coating
Add cornflour, maida, black pepper, red chilli powder, ginger-garlic paste and salt to the corn. Mix well. Add a little water only if required to create a light coating.

3. Fry the corn
Heat oil over medium-high heat. Carefully add the coated corn and fry until golden and crispy. Remove and drain on a paper towel.

4. Prepare the seasoning
Heat 1 tbsp oil in a wok. Add garlic and green chilli and sauté for a few seconds. Add onion and capsicum and stir-fry on high heat for 1–2 minutes.

5. Toss everything together
Add the crispy corn, chilli flakes, black pepper and chaat masala. Toss on high heat for about 30 seconds.

6. Finish & serve
Turn off the heat. Add lemon juice, spring onion and fresh coriander. Toss once more and serve immediately.

  • Make sure the boiled corn is completely dry before coating.
  • Don’t make the coating too wet.
  • Fry in small batches to prevent the corn from becoming soggy.
  • For extra crunch, double-fry the corn for 1–2 minutes.
  • Add lemon juice just before serving.
