How to Make Vegetable Dumplings
Step 1: Prepare the Dough
Add all-purpose flour and salt to a mixing bowl.
Gradually add warm water and knead into a smooth and firm dough. Add 1 teaspoon oil and knead for another 2–3 minutes.
Cover the dough with a damp cloth and let it rest for 20–30 minutes.
Step 2: Prepare the Vegetable Filling
Heat oil in a wok or large pan over high heat.
Add chopped garlic, ginger and green chilli. Stir-fry for a few seconds until fragrant.
Add cabbage, carrot, capsicum, beans and spring onions.
Stir-fry the vegetables on high heat for 2–3 minutes. Keep them slightly crunchy.
Add soy sauce, vinegar, black pepper and salt.
Mix well and cook for another minute.
Turn off the heat and allow the filling to cool completely.
Step 3: Roll the Dumpling Wrappers
Divide the rested dough into small equal-sized portions.
Roll each portion into a thin circular wrapper, approximately 3–4 inches in diameter.
Keep the centre slightly thicker than the edges so the dumpling doesn’t tear while filling.
Step 4: Fill the Dumplings
Place approximately 1 tablespoon of vegetable filling in the centre of each wrapper.
Do not overfill, as it can make folding difficult.
Moisten the edges of the wrapper with a little water.
Step 5: Shape the Dumplings
Fold the wrapper over the filling to form a half-moon shape and press the edges firmly to seal.
You can also make pleated dumplings by creating small folds along one side and sealing them neatly.
Repeat with the remaining wrappers and filling.
Step 6: Steam the Dumplings
Grease a steamer basket lightly with oil or line it with parchment paper.
Arrange the dumplings in the steamer, leaving some space between each one.
Steam over medium-high heat for 10–12 minutes, or until the wrappers become slightly translucent and cooked through.
Avoid overcrowding the steamer.
Step 7: Serve
Carefully remove the steamed dumplings from the steamer.
Garnish with chopped spring onions and serve hot with spicy chilli-garlic chutney and soy sauce.
Tips for Perfect Vegetable Dumplings
- Keep the dough smooth and firm, not sticky.
- Always allow the dough to rest before rolling.
- Chop the vegetables very finely so the dumplings are easy to fill and fold.
- Stir-fry the vegetables quickly on high heat to prevent excess moisture.
- Cool the filling completely before stuffing the wrappers.
- Don’t overfill the dumplings.
- Seal the edges properly so the filling doesn’t escape during steaming.
- Avoid placing the dumplings too close together in the steamer.
- Do not over-steam, as the wrappers can become chewy.
Variations
Pan-Fried Vegetable Dumplings

Add 1–2 tablespoons of Schezwan sauce to the vegetable filling for a spicy and flavorful version.
Cheese Vegetable Dumplings
Add a small amount of grated mozzarella or processed cheese to the cooled vegetable filling before shaping the dumplings.

Frequently Asked Questions
Can I make dumpling wrappers in advance?
Yes. Homemade wrappers can be prepared a few hours in advance. Dust them lightly with flour and keep them covered so they don’t dry out.
Why are my dumplings opening while steaming?
The edges may not have been sealed properly, or the wrappers may have been overfilled. Make sure the edges are slightly moistened and pressed firmly together.
Can I freeze vegetable dumplings?
Yes. Arrange uncooked dumplings in a single layer on a tray and freeze them until firm. Transfer them to an airtight container or freezer bag. Steam them directly from frozen, adding a few extra minutes to the cooking time.
How do I prevent dumplings from sticking to the steamer?
Lightly grease the steamer basket or use parchment paper with small holes. You can also place cabbage leaves underneath the dumplings.
Are these dumplings the same as momos?
They are very similar. In India, steamed vegetable dumplings are commonly called momos, while the broader term “dumplings” is used for similar filled dough preparations across many Asian cuisines.
