About Gulab Jamun

Gulab Jamun is one of India’s most loved traditional desserts. These soft, golden-brown milk-solid dumplings are deep-fried until perfectly cooked and then soaked in a fragrant sugar syrup. This easy homemade Gulab Jamun recipe gives you soft, juicy, and delicious results every time.

Ingredients

For Gulab Jamun

  • 1 cup khoya/mawa
  • 2 tablespoons all-purpose flour (maida)
  • ¼ teaspoon baking soda
  • 1–2 tablespoons milk, as required
  • 2 tablespoons chopped pistachios or almonds (optional)
  • Oil or ghee, for deep frying

For Sugar Syrup

  • 1½ cups sugar
  • 1½ cups water
  • 3–4 green cardamom pods, lightly crushed
  • 1 teaspoon rose water
  • A few strands of saffron (optional)

Step-by-Step Instructions

Step 1: Prepare the Sugar Syrup

Add sugar and water to a saucepan.

Heat over medium flame and stir until the sugar dissolves completely.

Add crushed cardamom and saffron. Boil the syrup for about 5–7 minutes.

Turn off the heat and add rose water. Keep the syrup warm.

Tip: The syrup should be slightly sticky but not have a thick, one-string consistency.

Step 2: Prepare the Gulab Jamun Dough

Take grated or crumbled khoya in a mixing bowl.

Add maida and baking soda. Mix gently.

Gradually add milk, little by little, and knead until you get a soft and smooth dough.

Do not knead too much, as this can make the Gulab Jamuns hard.

Step 3: Shape the Gulab Jamuns

Divide the dough into small equal portions.

Grease your palms lightly with oil or ghee and roll each portion into a smooth ball.

Make sure there are no cracks on the surface, otherwise the Gulab Jamuns may break while frying.

Step 4: Heat the Oil

Heat oil or ghee in a deep pan over low to medium heat.

To check the temperature, drop a tiny piece of dough into the oil. It should rise slowly to the surface without browning immediately.

Step 5: Fry the Gulab Jamuns

Carefully place the Gulab Jamun balls into the warm oil.

Fry them on low to medium heat, gently stirring the oil so they cook evenly.

Continue frying until they become evenly golden brown.

Step 6: Soak in Sugar Syrup

Remove the fried Gulab Jamuns and drain them briefly.

Immediately place them into the warm sugar syrup.

Let them soak for at least 2–3 hours so they absorb the syrup and become soft and juicy.

Step 7: Serve

Serve Gulab Jamuns warm or at room temperature.

For an extra-special dessert, garnish with chopped pistachios, almonds, or a few saffron strands.

Frequently Asked Questions

Why do my Gulab Jamuns become hard?

Gulab Jamuns can become hard if too much flour is added, the dough is over-kneaded, or they are fried at very high temperature.

Why do Gulab Jamuns crack while frying?

Cracks usually occur when the dough is too dry or the balls are not rolled smoothly. Add a little milk to the dough and make smooth, crack-free balls.

Why are my Gulab Jamuns raw inside?

The oil may be too hot. Fry them slowly over low to medium heat so they cook evenly from the inside.

Should the sugar syrup be hot or cold?

The syrup should be warm, not boiling hot, when the fried Gulab Jamuns are added.

How long should Gulab Jamuns soak in syrup?

For the best results, allow them to soak for at least 2–3 hours. They become softer and juicier as they absorb the syrup.

Can I use ready-made Gulab Jamun mix?

Yes. Ready-made Gulab Jamun mix can be used as a convenient alternative. Follow the instructions on the package for the correct amount of water or milk.

Storage

Store Gulab Jamuns in an airtight container along with the sugar syrup.

They can be refrigerated for up to 4–5 days. Warm them gently before serving for the best taste and texture.
