Ingredients

- 1–2 green chilies, finely chopped

- 1 teaspoon cumin seeds

- ½ teaspoon coriander powder
- ½ teaspoon garam masala
- ½ teaspoon red chili powder
- ½ teaspoon amchur powder
- 1 tablespoon chopped fresh coriander
- Salt to taste
- 1 tablespoon oil

Step-by-Step Instructions
Step 1: Prepare the Samosa Dough
In a large mixing bowl, add maida, salt, and ajwain.
Add oil or ghee and mix well. Rub the flour between your fingers until it resembles breadcrumbs.

Take one half and form it into a cone by bringing the straight edges together.
Apply a little water along the edges and press firmly to seal the cone.
Step 6: Fill the Samosa
Fill the cone with 1–2 tablespoons of the prepared potato filling.
Do not overfill it.
Apply a little water to the open edges and carefully seal the samosa.
Repeat the process with the remaining dough and filling.
Step 7: Fry the Samosas
Heat oil in a deep pan over low to medium heat.
Carefully place the samosas into the warm oil.
Fry them slowly until they become crisp and golden brown.
