How to Make Manchow Soup

Step 1: Prepare the Vegetables

Wash and finely chop all the vegetables. Keep them ready before starting the cooking process, as the soup cooks quickly on high heat.

Step 2: Sauté Aromatics

Heat oil in a large pan or wok over medium-high heat. Add chopped garlic, ginger and green chillies. Sauté for 30–40 seconds until aromatic.

Step 3: Add Vegetables

Add cabbage, carrot, capsicum, French beans and spring onion. Stir-fry on high heat for 2–3 minutes. Keep the vegetables slightly crunchy for the best texture.

Step 4: Add Sauces

Add soy sauce, red chilli sauce, vinegar and black pepper powder. Mix everything well.

Step 5: Add Stock

Pour in the vegetable stock or water and bring the soup to a gentle boil. Cook for 4–5 minutes.

Step 6: Thicken the Soup

In a small bowl, mix cornflour with water to make a smooth slurry. Slowly add it to the simmering soup while continuously stirring to prevent lumps.

Cook for another 2–3 minutes until the soup becomes slightly thick and glossy.

Step 7: Final Seasoning

Taste the soup and adjust salt, pepper or chilli sauce according to your preference.

Step 8: Serve

Pour hot Manchow Soup into serving bowls. Top generously with crispy fried noodles, chopped spring onion and fresh coriander.

Serve hot and enjoy!

  • Finely chop the vegetables for the authentic Manchow Soup texture.
  • Stir-fry vegetables on high heat to retain their crunch.
  • Add cornflour slurry gradually while stirring continuously.
  • Don’t overcook the vegetables, otherwise the soup can become mushy.
  • Adjust the chilli sauce according to your spice preference.
  • For a healthier version, use baked or air-fried noodles instead of deep-fried noodles.
