Ingredients

For the Dal

  • 1 medium onion, finely chopped
  • 2 medium tomatoes, finely chopped

  • 2 tablespoons ghee
  • 1 teaspoon cumin seeds
  • A pinch of asafoetida (hing)
  • ½ teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1 teaspoon coriander powder
  • ½ teaspoon garam masala
  • Salt to taste
  • 2 tablespoons chopped fresh coriander

For the Baati

  • 3 cups whole wheat flour
  • ½ cup semolina (sooji)
  • ½ teaspoon baking powder (optional)
  • 1 teaspoon carom seeds (ajwain)
  • ½ teaspoon salt
  • ½ cup melted ghee
  • About 1 cup warm water (as needed)
  • Extra melted ghee for dipping

For the Churma

  • 4 cooked baatis
  • ½ cup powdered sugar
  • ¼ cup melted ghee
  • ¼ teaspoon cardamom powder
  • 2 tablespoons chopped almonds
  • 2 tablespoons chopped cashews
  • 1 tablespoon raisins (optional)
  • 1 tablespoon chopped pistachios (optional)

Instructions

Step 1: Cook the Dal

Wash all the lentils thoroughly and soak them for 20–30 minutes.

Pressure cook the lentils with water, turmeric, and a little salt for 4–5 whistles until soft.

Heat ghee in a pan. Add cumin seeds and hing. Once they splutter, add onions and sauté until golden brown. Stir in ginger-garlic paste and green chilies, then cook for 1 minute.

Add tomatoes, coriander powder, red chili powder, and cook until the tomatoes become soft and the ghee separates.

Pour in the cooked dal and adjust the consistency with water if needed. Simmer for 8–10 minutes. Finish with garam masala and chopped coriander.


Step 2: Prepare the Baati

In a large mixing bowl, combine whole wheat flour, semolina, baking powder, ajwain, salt, and melted ghee.

Rub the ghee into the flour until it resembles breadcrumbs.

Gradually add warm water and knead into a stiff dough. Cover and let it rest for 15 minutes.

Divide the dough into equal portions and shape them into smooth balls. Press a small indentation in the center of each baati.

Arrange the baatis on a baking tray.

Bake in a preheated oven at 200°C (390°F) for 30–35 minutes, turning halfway through, until evenly golden and crisp.

Immediately dip the hot baatis in melted ghee for extra flavor.


Step 3: Make the Churma

Break the baked baatis into pieces and allow them to cool slightly.

Grind them into a coarse crumb using a food processor or mixer.

Transfer to a bowl and mix in powdered sugar, melted ghee, cardamom powder, and chopped dry fruits until well combined.
