Dal Makhani (Restaurant Style)

Dal Makhani is one of North India’s most loved dishes, known for its rich, creamy texture and buttery flavor. This authentic restaurant-style recipe is slow-cooked with whole black lentils and kidney beans, making it perfect for family dinners, festive meals, or special occasions.

Ingredients

For Boiling

  • 1 cup whole black gram (urad dal)
  • ¼ cup kidney beans (rajma)
  • 4 cups water
  • 1 tsp salt

For Gravy

  • 2 tbsp butter
  • 1 tbsp oil
  • 1 tsp cumin seeds
  • 1 medium onion, finely chopped
  • 1 tbsp ginger-garlic paste
  • 2 large tomatoes, pureed
  • 2 green chilies, chopped
  • 1 tsp Kashmiri red chili powder
  • ½ tsp turmeric powder
  • 1 tsp coriander powder
  • ½ tsp garam masala
  • Salt to taste
  • ½ cup fresh cream
  • 1 tsp kasuri methi (crushed)
  • Fresh coriander leaves for garnish

Instructions

Step 1: Soak the Lentils

Wash the urad dal and rajma thoroughly. Soak them in enough water overnight or for at least 8 hours.

Step 2: Pressure Cook

Drain the soaked lentils and transfer them to a pressure cooker.

Add:

  • Water
  • Salt

Pressure cook for 8–10 whistles or until both the dal and rajma become soft.

Step 3: Prepare the Masala

Heat butter and oil in a heavy-bottom pan.

Add cumin seeds and let them crackle.

Add chopped onions and sauté until golden brown.

Mix in ginger-garlic paste and cook until the raw aroma disappears.

Step 4: Add Tomatoes & Spices

Pour in tomato puree.

Cook until the oil separates.

Add:

  • Turmeric
  • Red chili powder
  • Coriander powder
  • Salt

Cook for another 5–7 minutes.

Step 5: Combine Everything

Add the cooked dal and rajma along with their cooking water.

Mix well.

Simmer on low heat for 30–40 minutes, stirring occasionally. Slow cooking gives Dal Makhani its rich restaurant-style taste.

Step 6: Finish with Cream

Add:

  • Fresh cream
  • Butter
  • Garam masala
  • Crushed kasuri methi

Cook for another 5 minutes.

Turn off the heat and garnish with coriander leaves.
